A Quick and Easy Recipe from Our Newlywed Kitchen
Serves 6
Crust Ingredients
2 cups all-purpose flour
1 tsp salt
1/3 cup shortening
6 Tbs ice water
Filling Ingredients
2 cups apples (peeled and diced)
1/4 cup sugar
1 Tbs butter
1/2 tsp nutmeg
1/2 tsp cinnamon
6 Tbs white sugar (to sprinkle over top)
3 cups vegetable oil for frying
Directions
In a medium bowl mix flour, salt and shortening with a pastry blender until combined and small beads form. Mix in ice water one tablespoon at a time continuing to mix until you can form a ball with the dough. Wrap in plastic and store in the refrigerator for 30 minutes while you prepare the filling.
Filling Directions
Peel and dice two large apples. Place in a small saucepan on low uncovered. Add sugar and spices and toss to coat apples, then add butter. Allow to cook until tender, about 15 minutes. Mash apples just a bit to absorb more of the juice and allow it to cool.
Pour oil in an electric skillet with high sides and heat to 375°.
Transfer dough to a lightly floured work surface and roll out to 1/8 inch thickness. Cut out large circles using a 6-inch cookie cutter or large lid. Place 1 heaping Tablespoon of filling in the center of each round of dough. Moisten edges with water, fold in half and pinch closed with a fork. Fry pies a few at a time, 2-3 minutes until golden brown, then flip gently using a spatula and fry for another couple of minutes. Remove from pan and drain on paper towels. Sprinkle with white sugar and serve.
