Serves 4
Ingredients:
1/2 cup fresh-squeezed orange juice
1/4 cup Hellman’s mayonnaise
1 Tbs prepared horseradish sauce
1 tsp Lawry’s Seasoning salt
1 Tbs honey
1 Tbs butter
1 Tbs olive oil
4 fillets of cod
Directions:
Whisk together the orange juice and the next 4 ingredients. In a large non-stick skillet over medium heat melt butter and add oil. Pat fish dry and brown for 3 minutes per side, then remove from pan. Pour juice mixture into pan and cook for 5 minutes until thickened. Add fish back in pan and spoon sauce over fish. Serve with roasted rosemary potatoes and steamed vegetables.
