Wagon Wheel Cookies

Our Newlywed Kitchen • Quick and Easy Recipe
 
Ingredients 

3/4 cup shortening 

12 Tbsp cocoa

2 cups sugar

2 tsp vanilla

4 eggs

2 cups flour

2 tsp baking powder

1 tsp salt

1/2 cup nuts (chopped)

1/2 cup powdered sugar

 

 
Directions

In a saucepan over medium heat melt shortening. Turn off heat and add cocoa stirring with a whisk quickly to combine. Using a spatula transfer the chocolate mixture to a mixing bowl, then add sugar and vanilla and blend until well combined. (Note: Allow mixture to cool about 5 minutes, then add the eggs and vanilla. You want to avoid  “cooking” the eggs by adding them after the mixture cools.) Add dry ingredients of flour, baking powder and salt, combine well then mix in nuts. 

Refrigerate cookie dough (at least 1 hour) 

Pull the cookie dough from the refrigerator and preheat oven to 350°. Place powdered sugar in a small bowl. 

Dough will be very sticky. Scoop out one heaping tablespoon of dough and use two spoons or a cookie scoop to scrape into the bowl of powdered sugar and cover completely. Remove and gently roll dough in your hands to form a 1” ball keeping as much powdered sugar on the surface as possible. The sugar helps the dough from sticking to your hands. Position 12 dough balls on an 18” x 13” cookie sheet spacing 2-3 inches apart. Bake cookies for 10 minutes. Remove from pan and allow to cool on a wire rack.

Serve and Enjoy!

MyTip: Stack cookies three high in a gallon-sized freezer bag and seal. Freeze and save for arriving guests. To serve: thaw for 10 minutes. They will be as fresh as the day you made them.
