A Quick and Easy Recipe from Our Newlywed Kitchen
Serves 12
Ingredients:
1/2 lb lean ground beef
3/4 tsp salt
1/2 tsp black pepper
1 tsp dried basil
1 tsp parsley
1 small onion (chopped)
3 stalks celery (sliced)
3 carrots (peeled and sliced)
6 cups chicken broth
2–3 small potatoes (peeled and diced)
4 Tbs. butter
1/4 cup flour
1.5 cups milk
3/4 lb American or Cheddar Cheese (cubed)
Hot sauce (optional)
Directions:
In a Dutch oven, brown ground beef and add spices. Then add onions, celery, and carrots. Sauté for 4 more minutes, then add broth and potatoes. Bring potatoes to a boil, and reduce heat. Simmer until tender, about 10 minutes. In a saucepan melt butter over low heat, then add flour stirring constantly for 2-3 minutes. Add mixture to broth. Bring broth to a boil, then reduce heat and simmer until thickened. Whisk in milk and cheese. Keep whisking until cheese melts. Serve with bread and hot sauce.
